Best Chocolate Cupcakes Ever!

Chocolate Cupcake Recipe:

(makes 24-27 standard sized cupcakes)

2 cups sugar

1 3/4 cups all purpose flour

3/4 cup unsweetened cocoa (best quality available)

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup whole milk

1/2 cup vegetable oil

2 teaspoons vanilla extract (best quality available)

1 cup boiling water


Line muffin tin with paper liners.  Heat oven to 350*F.

In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt.

Add eggs, milk, oil and vanilla.  Beat on medium speed for one minute.

Stir in boiling water (the batter will be thin, don’t worry, this is right).

Fill liners 2/3 full with batter.  (I usually put the batter into a large measuring cup with a pour spout, and then pour the batter into the liners.)

Bake cupcakes for aproximately 18-22 minutes.

Cool completely on wire rack before frosting.



Vegan Birthday Cake


You might have gasped when you heard the word “vegan” in desserts but, it is still possible to make a delicious treat without any dairy ingredients. My fellow blogger and I found this recipe from the blog “going home to roost” but we added a sweet twist to it to suit our taste and our uncle, for which it was his 36th birthday.

Ingredients –

2 cups cake flour
3/4 cup granulated sugar
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup water
2 tbs earth balance butter (preferred in a stick form than a tub form)
2 tbs coconut oil
1 tsp vanilla flavoring
1 tsp lemon juice


preheat the oven to 350 degrees. combine the dry ingredients in a mixing bowl (flour, sugar, salt, baking soda and powder) and mix together.

in a separate bowl, combine the wet ingredients (water, earth balance, coconut oil, vanilla, lemon juice) and mix together.

slowly pour the wet ingredients into the bowl with the dry ingredients and mix slowly until it is well combined. a few little lumps will remain.

pour the batter into a lightly greased cake pan and bake for 25-30 minutes, or until a knife can be inserted into the middle and come out clean.

remove and let cool for at least 30 minutes before icing.

1/2 cup earth balance butter, at room temperature
3 cups confectioners sugar, sifted
1/2 tsp salt
1 tsp vanilla flavoring
2 tsp lemon juice


Place the 1/2 cup earth balance butter in a mixing bowl, and beat on high as you gradually add in the lemon juice, vanilla extract and salt. continue to mix for 3-4 minutes. as it continues to beat, slowly start adding your 3 cups of sifted confectioners sugar. beat on high for another 5-10 minutes to achieve a really fluffy, smooth texture.
